Taleggio and Quartirolo
Taleggio Valley tells a rare story of respect and coexistence between mankind and nature, in an even exchange that has enriched them both through each other’s presence, bringing to life pastures and ancient traditions that have created truly one-of-a-kind cheeses.
Coming from these valleys are Piaceri Italiani Taleggio DOP and Quartirolo Lombardo DOP, two Lombard specialties with characteristic, unmistakable flavours, produced in natural environments using ancient methods passed down from generation to generation.
The perfect balance between the past and modernity
Research and innovation are at the foundation of the excellence of our cheese, ensured thanks to a controlled production chain and the constant push to improve processes and production techniques.
This is a kind of production where the old and the new coexist in harmony and in the knowledge that what is now tradition was once revolutionary. Our Piaceri Italiani Taleggio and Quartirolo are the fruit of manual, artisan production processes, the use of natural tools, a human-focused workforce, and the capacity to reinvent oneself.
Piaceri Italiani Taleggio and Quartirolo: delicious by nature
Our Piaceri Italiani Taleggio DOP is a soft cheese produced with pasteurised milk. It is aged following ancient methods in which the wheels, wrapped in cotton cloths, are left to age in pinewood boxes in reinforced concrete underground cellars, slowly and at low temperatures, for over 40 days. They are salted weekly by hand, using only salt and water. Our Quartirolo DOP, a specialty of Lombard cheese production, is a fresh, slightly lumpy and crumbly cheese with an intense white colour and no rind, an intense milky flavour and a slightly acidic aftertaste that gives it a kind of freshness.
From simplicity to gourmet
Try our Taleggio DOP as it is, on its own, in salads or at the end of a meal with fruit, or use it to prepare sauces or melted on vegetables, pizza, or crêpes. Perfect paired with full-bodied red wines.
Our Piaceri Italiani Quartirolo Lombardo DOP, on the other hand, is ideal served at room temperature to enrich salads and is excellent with a drizzle of olive oil and some pepper. You can also try it grilled, to accompany vegetables, or with walnuts, apple, grapes, and honey.
