The production chain for our 30-month Parmigiano Reggiano DOP is short and controlled, with sustainability at its heart. Every process is carried out paying great attention to the animals’ wellbeing, with research aiming to constantly improve our production processes so that they have a smaller impact on the environment while keeping the freshness and quality of our aged cheese intact, as certified by the Parmigiano Reggiano Consortium.

Naturally delicious

Producing Parmigiano Reggiano DOP means completing a journey among herds of cows fed exclusively with native hay and grass without the use of silage or fermented fodder, actions perfected by experience, and inspections and tests that certify unparalleled quality.

To prepare each wheel of Parmigiano Reggiano we need around 550 litres of milk, which is left to curdle slowly, with only natural whey starter used as a bacterial starter and rich in lactic ferments. The curd is then broken up by the master cheesemaker into minuscule granules and cooked at 55°C. This is followed by the fundamental ageing phase which will transform the wheels thus created into the irreplaceable element on your table and in all your recipes.
