From the olive to the oil, quality is a work of precision
To get excellent extra-virgin olive oil, nothing can be left to chance.
Every step has its right moment, its tools, its rules.
We start with the harvest itself, carried out by positioning nets below the trees and shaking the branches with mechanical arms that, vibrating, make the olives fall. They are separated from the leaves and twigs, washed, and dried.
The first transformation takes place with the crushing of the olives, which produces a dense, creamy paste. In the next phase, the olive paste undergoes cold pressing, at a temperature strictly kept at between 20° and 27° in order to preserve the sensory characteristics.
After passing through various processes to remove impurities, the oil is finally collected in containers suitable for protecting its quality.
